The word Biscotti is Italian for biscuit and originates from the medieval Latin word “biscoctus” meaning twice cooked/baked. Biscotti (or biscuits) were baked twice in the oven to make them very low in moisture which preserved them for longer making them useful for long journeys or wars and were an important part of the Roman Legions diet. The word came to the English language as “biscuit” from the Italian “bis” twice and “cotto” cooked.
In North America the Italian term “biscotti” has been used to describe a certain type of biscuit which comes from Tuscany called “cantuccini” which is a hard almond flavoured biscuit normally served in Italy with a sweet dessert wine. The biscotti or cantuccini these days usually accompanies an espresso, cappuccino or latte.
