A favourite drink of Ernest Hemingway, Mojitos originated in the sultry bars of Cuba. Some say that African slaves working in the Cuban cane fields in the 19th century used to drink Guarapo (sugar cane juice) which was eventually used in Mojitos. The predecessor of rum was made with tafia/aguardiente meaning “firewater” or literally “burning water” and was between 29 – 60% alcohol! Mint, lime and sugar were added to hide the harsh taste of this spirit.
